Production Area: San Quirino (PN) - Friuli Venezia Giulia Soil: flat area consisting of the alluvial cone of the Cellina torrent. It is a thick mattress of alluvial sediments of calcareous-dolomitic nature of fluvioglacial origin located at the foot of the Dolomites. Vinification: after a light pressing, the grapes are left to macerate in stainless steel tanks for 5-8 days, during which continuous operations are carried out to completely extract the noble polyphenols from the skin. Before alcoholic fermentation, malolactic fermentation is also started. The maceration temperature is kept deliberately low in order not to lose the fruity notes. Ageing: maturation at constant temperature until bottling Colour: intense red with violet reflections Bouquet: aromas of ripe berries. The bouquet evolves into notes of vanilla, licorice and spices.
