Harvesting takes place from the first decade of October. Vinification involves a long maceration of the skins for 25 days and fermentation in stainless steel. Aging involves a 6-month stay in French and Slavonian oak tonneaux (20% first-passage and 80% second-passage woods) and an additional 4 months in bottle. Intense ruby red color, with a full nose where ripe plum dominates while in the mouth it shifts to tertiary hints of chocolate and cocoa. Goes well with aged cheeses, cured meats and meat dishes.
