Refinement: in stainless steel tanks, in contact with noble scum Foam intake: refermentation in autoclave at controlled temperature (cuvée close) and selected yeasts for about 120 days. Tartaric stabilization at low temperatures Bottling: isobaric, after sterile filtration Colour: brilliant, pale straw yellow with greenish reflections. Very fine and persistent perlage Bouquet: complex with hints reminiscent of green apple and pear, white peach, apricot and a delicate floral Taste: Very creamy and elegant perlage.
