TASTING NOTES

Brilliant straw yellow to the eye, enhanced by golden hues and fine bubbles. On the nose, the aromas of quince and yellow-fleshed fruit are set against an elegantly toasted, spicy and mineral background. The taste is satisfying, enlivened by a chiselled acidity that is never over the top.

PAIRINGS

Excellent with crustaceans in sauce and stuffed white meats, it will satisfy sushi lovers.

WINERY

Bruno Michel is a vigneron from Pierry, near the village of Epernay. Bruno, who loves the land and working in the vineyard, began his activity in 1980 as a vine nurseryman and became a Champagne producer in 1985, with the precious help of his wife Catherine. The 12 hectares at his disposal are strictly organic, reflecting a philosophy that puts the vineyard at the centre of everything, the place where the quality of production originates. Bruno is firmly convinced that only careful, respectful and scrupulous work in the vineyard can bring grapes of the highest potential to the winery. The vineyards, divided into 35 parcels, see Chardonnay and Pinot Noir as the leading varieties, flanked by some areas dedicated to Pinot Meunier. Bruno Michel's Champagnes are matured in contact with the yeasts in fascinating cellars, dug out of chalk by Benedictine monks during the 18th century. These are ideal places for the fine bubbles to rest slowly, thanks to the constant temperature, humidity and special light. Bruno Michel's collection is made up of Champagnes that differ in terms of grape origin, cuvée composition and months of ageing, but all share a common thread: they are all capable of conveying the thought and, above all, the inspired hand of one of the most appreciated vignerons.

The Champagne Extra Brut AOC "Assemblée", as the name suggests, is the result of the union of several base wines, made from chardonnay and pinot meunier grapes, 20% of which are reserve wines. The rigorous work in the vineyards, which are run under a certified organic system, and the respectful processes in the cellar, have enabled Bruno Michel to establish himself as one of the vigneron most appreciated by wine lovers. L'Assemblée is one of his best-loved products, winning the appreciation of enthusiasts and critics year after year.
