Sullali is a new way of conceiving Franciacorta. It stems from the idea of creating a product that fully reflects the qualities of an extraordinary land. The modern reinterpretation of the Ancestrale Method allows this Franciacorta to re-ferment in the bottle using the residual sugars from the first fermentation. Sullali is made from carefully selected grapes, from which only the must produced by the softest pressing is taken. After the first fermentation and maturation in steel tanks, Sullali is bottled with specific yeasts for re-fermentation, without the addition of external sugars. Twenty-four months of ageing are necessary to obtain the distinctive characteristics of this Franciacorta. At disgorgement, a small addition of liqueur d'expedition, produced with a part of the original wine, allows an Extra Brut version to be made and maintains the fresh and citrus notes that define Sullali
