Five friends over dinner one evening: this is how the Derbusco Cives project began, whose very name is intended to demonstrate its attachment to the territory and tradition, albeit young, of Franciacorta. The baptism of this winery was in fact in the spring of 2010 when the first bottles, disgorged at the end of 2009, were put on the market, thus beginning this new adventure. From the 12 hectares cultivated in Erbusco, 6 Franciacorta wines are produced, all dosed to a minimum and with a much longer stay on the lees than required by the consortium's regulations. All following the Solo Uva method, created in 2012 with the Brescian Enoconsulting team, which begins with harvesting the grapes when fully ripe and then soft pressing. The sugars naturally present in the must are then sufficient for both the first fermentation and the bottle fermentation. These are the foundations of Derbusco Cives, a new reality born from the desire to make quality without compromise, which has already established itself for the great depth of its wines but above all for the finesse of its bubbles.
