The Extra Brut Champagne "Empreinte de Terroir" expresses with freshness, tension and minerality the territory of the Cote de Sezanne. After being matured on the lees for 36 months, it exudes aromas of fresh fruit, honey and bread crust. The taste is taut, vibrant and vertical, able to communicate with elegance and balance the imprint of the territory!

DESCRIPTION OF THE CHAMPAGNE EXTRA BRUT EMPREINTE DE TERROIR

The Extra Brut "Empreinte de Terroir" is a Champagne that expresses all the passion and dedication of the three Collet brothers for the terroir of the Cote de Sézanne. Here, on a limestone subsoil, marked by the presence of silt, clay and chalk, grow the vines of Chardonnay and Pinot Noir that give rise to this bottle, a refreshing blend, which announces itself with a mineral profile decidedly territorial. A perfect label to uncork now, to enjoy at the peak of its evolution.

This Extra Brut Champagne "Empreinte de Terroir" is made by Domaine Collet with a blend in which, alongside 70% Chardonnay, we find 30% Pinot Noir. The vines are carefully tended by the winery team, and the grapes, once harvested, are immediately taken to the winemaking facilities. Here they are alcoholically fermented in oak barrels, with malolactic fermentation for 80% of the mass and, at the time of blending, a percentage of reserve wines is added. Secondary fermentation takes place according to the production rules of the Champenoise Method, in the bottle, where the wine remains to mature on the lees for 3 years, after which the disgorging, dosage and bottling operations are carried out.

The "Empreinte de Terroir" is an Extra Brut Champagne that, in the glass, announces itself with a bright and shining straw colour, crossed by a fine-grained and persistent bubble. The aromas that envelop the nose recall fruity and mineral sensations, enhanced by touches of honey and nuances of bread crusts. On the palate it is full-bodied, dynamic and energetic, with an excellent freshness and a savoury flavour. A label that was born in the heart of the Cote de Sézanne, where Domaine Collet carries on a high level artisan production philosophy.

Three brothers and their indissoluble bond with the Cote de Sézanne

Domaine Collet is a small family business that has its roots in Fontaine Denis in the heart of the Cote de Sézanne, where the Chardonnay grape is the undisputed star of the area. They have always been wine-growers, and in the 1970s they began making wine from their own grapes in a cooperative, and it was Renée Collet who finally gave life to the Maison. Today, the reins of the winery are in the hands of the three sons, who are committed to carrying it forward in the same spirit as their father. Vincent, Thomas and Florent have been in charge of the vineyards, winemaking and sales for 16 years now, with different roles based on their different skills, and have always paid particular attention to the territory.

The Collet brothers' philosophy is to make the most of the specific characteristics of each of the 15 vineyards through careful vinification. The 5 hectares of property, mostly of Chardonnay (60%), Pinot Noir (39%) and Pinot Meunier (1%), stand on calcareous and clayey-silt soils, with a chalky subsoil up to 500 metres thick. The rows of vines are planted with grass, the use of herbicides has been reduced by 70% in the last 10 years and, thanks to the use of sexual confusion, pesticides have been banned, allowing insects that had disappeared for a long time to return to the vineyard. Once harvested, the grapes are pressed in the cellar and vinified separately in steel vats and wooden barrels, where they undergo part of the malolactic fermentation in order to transfer the intrinsic freshness of the grapes into the must. The heart of winemaking for Domaine Collet is ageing in new wooden barrels purchased from the best cooperage, where the wine rests until blending.
