VinificationGroppello and Barbera undergo two separate vinifications. Antitesi is made in part by pressing with a very low 50% yield and in small part by cap raising, which gives our Rosa wine its important structure. The peculiar vinification takes place through a long stay of the wine in contact with its noble lees. Here Antitesi acquires roundness, power and complexity
