The Champagne Brut "Nord Sud" of the French winery Domaine Collet is an agile and lively label that takes its name from the position of the vineyards from which the grapes come. Chardonnay and Pinot Noir are used in equal proportions and the wine is matured on its lees for 28 months. The view is rewarded by a deep straw yellow with golden hues while notes of green apple, citrus and bread crust are released. The taste is fresh, fruity, balanced and long.


Domaine Collet's Brut "Nord Sud" Champagne is an interesting label from this Maison de Recoltant Manipulant, which offers a small production of bottles made with care and artisan passion. It is a traditional cuvée, combining the structure and power of Pinot Noir with the refined floral and fruity elegance of Chardonnay. The result is a Champagne with a perfect balance of taste, based above all on the fragrance and freshness of its aromas. It is excellent to enjoy as an aperitif, to accompany hors d'oeuvres or delicately flavoured seafood dishes.

The "Nord Sud" is a Brut Champagne made by a small family-run Maison. Domaine Collet manages 5 hectares of vineyards in the Côte de Sezanne area, home of great Chardonnays. The estate is made up of numerous plots with vines rooted in soils of limestone, silt and clay, resting on a subsoil consisting of deep chalk banks, which gives the wines finesse and mineral freshness. The cuvée is composed of equal parts Chardonnay and Pinot Noir. Once the harvesting operations are completed, the grapes of the two varieties are vinified separately in a parcelwise manner. Soft pressing of the grapes is followed by fermentation of the must in temperature-controlled stainless steel tanks. After a few months, the vins clairs are blended and the second fermentation takes place in the bottle according to the Champenoise Method, with an ageing period of 28 months on the lees.

The Champagne Brut "Nord Sud" of the Maison Domaine Collet is a bottle with a classic face, made according to the best traditions of the area, which enhances above all the freshness and finesse of an agile flowing sip. To the eye, it is a beautiful, luminous pale yellow, with brilliant gold highlights. The perlage is fine, continuous and persistent. On the nose it offers aromas of citrus fruits, white pulp fruit, green apple, peach, Williams pear, floral nuances, hints of bread crust and pastry. On the palate it is intense and harmonious, with a smooth mouthfeel, ripe and rich aromas, well balanced by mineral freshness.

Domaine Collet

Three brothers and their indissoluble bond with the Cote de Sézanne

Domaine Collet is a small family business that has its roots in Fontaine Denis in the heart of the Cote de Sézanne, where the Chardonnay grape is the undisputed star of the area. They have always been wine-growers, and in the 1970s they began making wine from their own grapes in a cooperative, and it was Renée Collet who finally gave life to the Maison. Today, the reins of the winery are in the hands of the three sons, who are committed to carrying it forward in the same spirit as their father. Vincent, Thomas and Florent have been in charge of the vineyards, winemaking and sales for 16 years now, with different roles based on their different skills, and have always paid particular attention to the territory.

The Collet brothers' philosophy is to make the most of the specific characteristics of each of the 15 vineyards through careful vinification. The 5 hectares of property, mostly of Chardonnay (60%), Pinot Noir (39%) and Pinot Meunier (1%), stand on calcareous and clayey-silt soils, with a chalky subsoil up to 500 metres thick. The rows of vines are planted with grass, the use of herbicides has been reduced by 70% in the last 10 years and, thanks to the use of sexual confusion, pesticides have been banned, allowing insects that had disappeared for a long time to return to the vineyard. Once harvested, the grapes are pressed in the cellar and vinified separately in steel vats and wooden barrels, where they undergo part of the malolactic fermentation in order to transfer the intrinsic freshness of the grapes into the must. The heart of winemaking for Domaine Collet is ageing in new wooden barrels purchased from the best cooperage, where the wine rests until blending.
