Immediately after harvesting, part of the grapes are subjected to
soft destemming; the obtained must is then maintained at a
constant temperature of 5-6° C for about 12 hours. The liquid part
is fermented separately in steel tanks one by one.

about 15 to 20 days. Afterwards we make the cuvee Extra
DRY (using a variable percentage of cryomacerated wine) where
follows the frothy grip.
Colour // straw yellow with greenish reflections.
Aroma // fruity, with hints of apple; the dominant floral note is
the one with the wisteria in bloom and the acacia.
Taste // has a good acidic note, fresh taste, on the palate
is pleasant and harmonious.
pairings Excellent both as an aperitif and throughout the meal; ideal on dishes of
fish, vegetable and seafood soups, fresh cheeses and meats
