Before alcoholic fermentation, malolactic fermentation is also started. The maceration temperature is kept deliberately low in order not to lose the fruity notes. Ageing: maturation at constant temperature until bottling Colour: intense red with violet reflections Bouquet: aromas of ripe berries. The bouquet evolves into notes of vanilla, licorice and spices.
