White beer (Bière Blanche in French, Witbier in Flemish) is a style of beer that originated in Belgium and now boasts a tradition of more than 400 years.

The main characteristics of these beers are their soft colour, slender body, marked acidity and spice that gives fresh notes to the nose and mouth. They are light and refreshing beers, ideal for quenching the thirst during the summer season.

Their unusual colour, pale yellow that fades towards white, derives from the use of a high percentage of unmalted wheat that has not acquired colour during the drying phase that would necessarily follow the malting. This raw cereal contains intact its original cytolytic and proteolytic components and unfortunately has no enzymes. Used in generous quantities, over 40 % in our Fiordalisa, it requires particular attention during the mashing phase. Only the enzymes provided by the malt will have to carry out the entire work of degrading the reserve substances of all the cereals used in the baking process to provide the yeasts with a wort with the characteristic of a balanced diet.

To this end, we intervene on the quality of the water by providing salts that protect and support the action of enzymes and we conduct a very long infusion to give them all the time to act. After a slow separation of the sweet must from the brambles, during the boiling we add only a moderate quantity of noble hops because in this type of brassicola the taste and scents of the hops must not be marked.
After cooling, we ferment this beer with a strain of yeast of Belgian origin typically used for this style. This will develop during fermentation all that mix of aromas that are characteristic and make our Fiordalisa special.

According to tradition, in order to guarantee its longevity, the beer will be refermented in bottle or keg thanks to the addition of sugar and a new dosage of yeast.

ORGANOLEPTIC CHARACTERISTICS

Particularly light yellow in colour, it has an abundant and persistent white foam. Its appearance is decidedly cloudy, highlighting the use of a high percentage of unmalted wheat.

The nose is immediately struck by the refreshing notes of coriander supported by wider scents of orange and spices. The aroma is intense and fine.

In the mouth the beer is light-bodied, dry, well carbonated and endowed with good acidity. With strength, the aftertaste sensations persist and flow into a pleasant, fresh and citrusy aftertaste.
